macaroonFor the estimated one in 133 Canadians affected with celiac disease, grabbing a quick prepared snack when they’re on-the-go is not a simple task, as hidden sources of gluten in product ingredients are always top-of-mind. To help make that choice easier, Tim Hortons is now offering a new Gluten-Free Coconut Macaroon – the first menu item in a Canadian quick service restaurant to be certified gluten-free through the Canadian Celiac Association (CCA) Gluten-Free Certification Program.

“We’ve made a commitment to our guests to provide balanced menu choices, and the new Gluten-Free Coconut Macaroon is an example of that,” says Donna Finelli, Vice President Marketing, Food and Merchandise, Tim Hortons. “Given the growing number of people who have celiac disease and gluten intolerance, we’re making it just a little bit easier for friends and families to enjoy eating together at our restaurants. And the new macaroon tastes fantastic, which makes it a great snacking option for everyone, not just those with gluten intolerance.”

The Tim Hortons Gluten-Free Coconut Macaroon is certified through the Canadian Celiac Association Gluten-Free Certification Program, Canada’s only voluntary certification program designed for manufacturers of gluten-free products. The CCA’s Gluten-Free Certification Program trademark assures Canadians with celiac disease and gluten intolerance that products are safe to consume.

The Gluten-Free Certification Program (GFCP) is a voluntary certification program designed to help brand owners differentiate their gluten-free products from the increasing clutter of gluten-free claims, by displaying the GFCP trademark. Based on a robust third-party audit certification process at the manufacturing facility, the GFCP verifies their ability to regularly meet stringent requirements when managing gluten as part of their food safety programs.

  • Frozen egg whites (egg whites, sodium citrate, thriethly citrate, guar gum)
  • Water
  • Chocolately drizzle (icing sugar, water, sugar, cocoa, corn syrup)

  • Vanilla extract

We’ve had a few unsolicited reviews since the macaroons were released:

  1. One of my daughters is a step ahead of us – she actually tried the product with the following reaction:  NEGATIVE – so, save your money and tell Hortons their effort is appreciated but the have failed – back to the drawing board.
  2. The coconut macaroons come in a package with a due date. Taste like sh*t – full of sugar and preservatives.
  3. We picked them up today and we all had a look and try. Blech. I am with you. Yawn and yuck.
  4. Let us bring out the band and have a parade – mighty Tim Hortons labours for years and produces a gluten free coconut Macaroon – their first gluten free menu item. Pretty weak stuff and we are customers of Timmy’s Nothing to get excited about if one is a celiac and for someone who hates coconut macaroons – yawn!

Coconut Macaroons

Coconut Macaroons

  • 3 1/3 cups sweetened shredded coconut (400 gram pkg)
  • 1 cup icing sugar
  • ½ cup corn starch
  • 1 tsp xanthan gum
  • 1/8 tsp salt
  • 3 egg whites
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350º F.
  2. Grease a large baking sheet or line with parchment paper.
  3. Mix coconut, sugar, cornstarch, xanthan, salt in food processor just to blend.
  4. Add egg whites and vanilla and process until fully mixed. It will be stiff.
  5. With wet hands, form into 1 inch balls and place on baking sheet. (I use a 1 Tbsp sized ice cream scoop).They do not spread.
  6. Bake for 15 – 18 minutes until very lightly browned on edges.
  7. Cool on pan on wire rack for 10 minutes.
  8. Transfer to wire rack to cool fully.
  9. Store in airtight container for 2 days or freeze up to a month.
  10. Can be drizzled with ½ cup melted chocolate chips.
